tags
When viewing notes in list format, the last column to the right says "no tags". Is there a way of adding tags to notes, or is this just some architecture you put in place in case you were to add the capability in the future?

Yes, you can certainly add tags. In the tab area, you can simply click that column, and enter tags, separated by space or punctuation.
In the full note editor, click the i button top right, and add tags there for the current note.
