apple's Family Sharing feature
I noticed on the App Store that Family Sharing is available for your app. Have you tested this? (I have yet to use Family Sharing).
Will it allow each "family member" to create their own database of notes?

Yes, it should work. Anyone in the family should be able to install the app once purchased.
